Tornados and macaroni salad

Living in what is commonly called “tornado alley” is new to me. As long as I lived in California I experienced a number of weaker as well as strong earthquakes, a subtropical, canyon-fires, made it through a snow disaster and blizzards in Munich but after having watched in horror only yesterday evening the small city of Greensburg, Kansas, having been 95% destroyed by a monster-twister which had a funnel-width of 1.7 miles(!), killed at least nine people and injured dozens, I have to admit, I look a few more times in the sky to watch the clouds and check for those ominous funnels …

Till now – and I HOPE for the rest of tornado-season, we are blessed and nothing of this caliber comes directly this way. Severe downpours, strong wind-gusts up to 50 and more mph and occasional and VERY destructive hail over the last two days are bad enough … I can certainly live without the worst!

As to remain indoors once the sky turns dark grey or even ominously yellowish-tinged is strongly advised (but not kept by MANY people) and in order to do something constructive, I got into cooking-mood and prepared (besides of another bread-salad with VANILLA sauce!!) a very yummy dish – a macaroni salad.

I always like to have something around which can be eaten without having to cook and use a lot of time and a macaroni-salad is certainly a good idea to have around to munch on.

Here’s the recipe I use:

1 small package of small shell pasta (or any other small one)

1 large or 2 small cans of tuna, draines (I personally prefer tuna in water)

3 tomatoes, chopped

1 cucumber peeled and chopped

1 stalk sellery, chopped

1 onion, chopped

3 hard boiled eggs, chopped

1 large or 2 smaller pickles, chopped

salt / pepper to taste

~ 1-2 tbs. Mayonnaise or Miracle Whip

Assembly is a simple as can be:

Cook pasta, drain and cool. Combine pasta with remaining ingredients, toss thoroughly and refrigerate. For to give it a bit more of a zesty taste, I like to pour a bit of the pickle-juice in the mixture!
